Winter Salad

Ingredients

  • Sherry Vinaigrette Ingredients
  • 1/2 cup sherry vinegar
  • 2 Tbsp pomegranate juice
  • 2 Tbsp lemon juice
  • 1 Tbsp maple syrup
  • 3/4 cup olive oil
  • 3/4 tsp salt
  • Salad Ingredients
  • 2 endives, roots removed and leaves separated
  • 1 head radicchio, torn
  • 10 radishes, quartered
  • 1 fennel bulb, sliced thinly
  • 2 golden beets, sliced thinly
  • 1 red beet, sliced thinly
  • 2 cups butter lettuce, torn
  • 2 cups baby arugula
  • 1 bag Tres Latin Foods Mini Pupusas (any variety), cooked

Directions

  1. In a large mixing bowl, combine all vinaigrette ingredients, whisking in olive oil last.
  2. Add salad ingredients, tossing to combine.
  3. Serve immediately.
