Veggie Fajitas

This recipe makes it easy to get in those extra veggie.  Loaded with flavor and fresh ingredients, these fajitas will leave them wanting more!


  • 1 pouch Tres Latin Foods Fajita Skillet Sauce
  • 1 medium-large red bell pepper
  • 1 bunch broccolini (or regular brocolli)
  • 8 oz button mushrooms
  • ½ yellow onion
  • 8-16 soft corn tortillas (works best if you double them up to prevent breakage)
  • 1-2 Tbsp olive oil
  • Salt and pepper (to taste)
  • Avocado or guacamole
  • Cilantro and lime slices (for garnish)


  1. Cut all raw veggies into bite size pieces and place in a container with a lid
  2. Pour in the entire pouch of Tres Latin Foods Fajita Skillet Sauce and mix until all veggies are coated in marinade
  3. Let mixture chill in the fridge for 2-3 hours or overnight
  4. Heat some olive oil on high in a large skillet and sauté the marinated veggies for 5-6 minutes
  5. Spoon the hot veggies onto warm corn tortillas (double them up to prevent breakage!) and top with avocado, cilantro, and lime.
  6. Makes about 6-8 tacos
