Tomatillo Slow Cooker Chicken

With Tomatillo Slow Cooker Chicken, the possibilities are endless.  From tacos to center plate, this recipe has every occasion covered.

Ingredients

  • 1 large sliced red onion
  • 2-3 lb boneless, skinless chicken breast
  • 1 ½ cup Tres Latin Foods Salsa (your choice of flavor!)
  • 1 ¾ cup low sodium chicken broth
  • ½ tsp ancho chili powder
  • ½ tsp ground coriander
  • ½ tsp oregano
  • 3 coarsely chopped tomatoes

Directions

  1. Layer ingredients as listed above, starting with the sliced onion on the bottom, except the tomatoes
  2. Turn slow cooker on low, roast for 3-4 hours
  3. Add the tomatoes on top of all ingredients for the last hour of cooking
  4. Take chicken out of crock pot and let rest 10 minutes
  5. Trim and discard remaining fat and bones
  6. Pull apart chicken and return to slow cooker
  7. Serve many ways: as tacos, over beans and rice, in enchiladas, over nachos, as soup, dream it up
