Spicy Chipotle Black Beans

Spicy Chipotle Black Beans


  • 2 cans of black beans drained and rinsed
  • 1 Tbsp. of oil
  • 3 cloves of garlic, minced
  • 2 tsp. of cumin
  • 1 chipotle pepper in adobo sauce (finely chopped)
  • 1/2 cup of green bell pepper, diced
  • 1/4 cup of chopped green chiles
  • 1 tsp. of sea salt (or more to taste)
  • 1/2 cup + 2 Tbsp. of water
  • Cilantro and avocado for garnish


  1. In a medium saucepan, add oil and heat over medium-high heat
  2. Add onion and stir for 3 minutes until onion is soft
  3. Add garlic, stir and continue to cook for 2 minutes
  4. Add 2 TBSP of water, if onions are sticking to pot
  5. Add in cumin and stir for 1 minute
  6. Add in bell pepper and chiles and stir for 3 minutes
  7. Add in black beans and 3/4 cup water, stir to combine
  8. cover, then turn heat to low and simmer for 5 minutes for flavors to meld
  9. Serve over rice, on the side, or on top of your favorite pupusa
  10. Top with avocado and a little cilantro... and enjoy!
