Salsa Verde Mac & Cheese

Ingredients

  • 1 lb pasta
  • 1 1/2 lb chicken, precooked
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 cup butter
  • 1/4 cup flour
  • 1 14-oz can evaporated milk
  • 2 cups Monterey Jack cheese, shredded
  • 1 1/2 cups Tres Tomatillo Salsa (any kind)
  • 1/2 tsp cumin
  • Chopped cilantro, for garnish

Directions

  1. Cook pasta according to directions on package.
  2. Season chicken with salt, garlic powder and paprika. Set aside.
  3. Melt butter in heavy frying pan on medium heat. Add flour and stir constantly for 2 minutes.
  4. Add evaporated milk and whisk until smooth. Simmer until mixture thickens.
  5. Add cheese and stir until smooth, then add salsa and cumin.
  6. Stir chicken into sauce, then stir in pasta.
  7. Sprinkle with cilantro before serving.
