Lime Curtido


  • 18 oz green cabbage, thinly sliced
  • 4 oz carrots, thinly sliced
  • 3 oz white onion, thinly sliced
  • Zest of 1 lime
  • 1 tsp salt
  • 1 oz jalapeno, thinly sliced


  1. Combine cabbage, carrots, onion, lime zest and salt in a large bowl.
  2. Massage with hands for 2 minutes, until vegetables start to release their liquid. Then stir in jalapenos.
  3. Pack tightly into a mason jar, airlock and allow to ferment for 2 weeks before using.
