- 18 oz green cabbage, thinly sliced
- 4 oz carrots, thinly sliced
- 3 oz white onion, thinly sliced
- Zest of 1 lime
- 1 tsp salt
- 1 oz jalapeno, thinly sliced
- Combine cabbage, carrots, onion, lime zest and salt in a large bowl.
- Massage with hands for 2 minutes, until vegetables start to release their liquid. Then stir in jalapenos.
- Pack tightly into a mason jar, airlock and allow to ferment for 2 weeks before using.
