This lightly fermented Salvadoran cabbage slaw brings a nice crunch and a hint of acidity to accompany your pupusas.


  • 1 medium green cabbage, thinly sliced (can use fresh bag of coleslaw from produce section)
  • 2 carrots, grated
  • 1 onion, thinly sliced
  • 2 fresh green jalapeƱo peppers, thinly sliced
  • 2 teaspoon kosher salt
  • 2 teaspoon dried oregano (preferably Mexican)
  • 1/2 cup water
  • 1/2 cup apple cider vinegar


  1. Toss all ingredients together in a medium-sized bowl and let sit for 15 minutes
  2. Serve aside pupusa, pairing with salsa roja recipe
