Avocado Breakfast


Weekend mornings are all about that brunch and mimosa life, but when it comes to weekdays, we tend to find ourselves grabbing anything that looks mildly edible on our way out the front door. We are all guilty of disrespecting the most important meal of the day from time to time, so we embarked on a mission to put an end to the breakfast rut, and we’ve compiled some recipes that are so easy and delicious that you’ll break up with stale cereal bars for good this time.


This first dish is a great make-ahead meal since it holds up well in the freezer. We love multiplying this recipe for larger batches so we can grab ‘em on our way out the door all week long.


Egg Cups





  • 6 large eggs
  • Salt and pepper, to taste
  • 1/4 cup milk
  • 1/2 cup red bell pepper, diced
  • 3/4 cup spinach, thinly sliced
  • 1/4 cup shredded cheddar cheese



  1. Preheat oven to 375°F and grease muffin tin.
  2. Whisk together eggs and milk, then season with salt and pepper.
  3. Stir in red pepper, spinach and cheese.
  4. Bake for 20-25 minutes, until set. Enjoy immediately and store leftovers in the fridge.


Customizable and easily prepared ahead of time, you can’t make a list of easy breakfast ideas without the almighty breakfast burrito. And with the addition of our Enchilada Skillet Sauce, you can be sure they’ll still pack a flavor punch when you pull them out of the freezer.


Breakfast Burrito





  • Bag frozen tater tots
  • 2 Tbsp olive oil
  • 1 lb breakfast sausage, casing removed
  • 1 package Tres Enchilada Skillet Sauce
  • 8 eggs, beaten
  • 1/3 cup half & half
  • Salt and pepper, to taste
  • 1 can refried beans
  • 8 flour tortillas
  • 2 cups shredded cheddar cheese
  • 2 roma tomatoes, diced
  • 1/4 cup cilantro, chopped



  1. Cook tater tots according to directions on package.
  2. While tots cook, heat olive oil in large skillet over medium-high heat. Cook sausage with skillet sauce according to directions on package.
  3. Drain excess fat, reserving 1 Tbsp in skillet. Cook eggs, whisking in half & half when they begin to set. Season to taste and cook until firm.
  4. Spread beans in center of each tortilla, then top with tots, sausage, eggs, cheese, tomato and cilantro. Roll and place on baking sheet with seam-sides down.
  5. Bake 12-15 minutes, until heated through.


Brunch is great, but have you ever stayed in your pajamas all day? It’s not always just weekday mornings that you need an easy breakfast, so feel free to keep these keto-friendly avocado breakfast boats in your regular rotation.


Avocado Breakfast






  • 4 avocados, halved with pits removed
  • 4 oz smoked salmon
  • 8 eggs
  • Salt and pepper, to taste
  • Chili flakes
  • Fresh dill
  • Favorite Tres skillet sauce, to drizzle on top




  1. Preheat oven to 425°F.
  2. If the holes in the avocados look small, spoon out small amounts until they’re each able to hold an egg.
  3. Arrange avocados on baking sheet and line avocado holes with smoked salmon strips.
  4. In a small bowl, crack the eggs. Spoon the yolks and as much of the whites as the hollowed avocados will hold. Sprinkle with salt and pepper.
  5. Place baking sheet in oven and bake 15-20 minutes.
  6. Sprinkle with chili flakes and fresh dill.
  7. Drizzle with your favorite Tres skillet sauce and serve warm.
