1/4 red onion
1 jalapeno pepper, stemmed and seeded
1 tsp salt
1⁄4 teaspoon grated lime zest
1 1/2–2 tablespoons juice
3 ripe avocados, halved and pitted
1 Roma tomato, cored, seeded, and cut into 1/8-inch dice
2 tablespoons chopped fresh cilantro
Place onion, jalapeno, salt, and lime zest together on a cutting board and chop until very finely minced.
Transfer mixture to a medium bowl, and add 1 1/2 tablespoons lime juice
Add avocados and, using a fork, mash and stir mixture until well combines and some 1/4 inch pieces of avocado remain.
Stir in tomato and cilantro. Season with salt and up to additional 1/2 teaspoons lime juice to taste. Serve with chips, pupusas, or whatever you like!
