Butterfly Grilled Chicken with Tres Pupusas

This butterfly chicken is another recipe sure to impress, with seemingly complex techniques that are actually so easy! Serve with your favorite salsa and some Tres pupusas.

Ingredients

  • Whole chicken
  • 1 ½ tablespoons ground ancho chile powder
  • 1 teaspoon dried oregano
  • ¼ teaspoon ground cinnamon
  • 3 tablespoons vinegar
  • ¼ cup lemon juice
  • ¼ orange juice
  • 1 teaspoon salt
  • Your favorite Tres Latin Foods pupusas

Directions

Prepare the chicken by rinsing it in cold water and patting it dry. Now comes the butterfly part! Use poultry scissors (the shears that come with most knife sets) and cut from tail to neck down the backbone, breaking the bone. Spread the bird open on your work surface, breast side up. With a kitchen mallot, hammer the breast to flatten it out.

Combine all marinade ingredients into a paste, and rub onto the bird. Refrigerate for six to eight hours.

Heat grill to medium heat, about 350°. Remove chicken from refrigerator and tuck wings back into the crevice of the legs to keep from burning. Place on grill and weigh down flat, using a brick wrapped in tin foil or any heatproof heavy object. Flip every 15 minutes and baste with any remaining marinade. Cook until juices run clear and a meat thermometer reads 160°, should take about 55 minutes.

Prepare your chosen flavor of Tres pupusas according to instructions, and serve along with your favorite salsa and the grilled chicken.
