Prepare the chicken by rinsing it in cold water and patting it dry. Now comes the butterfly part! Use poultry scissors (the shears that come with most knife sets) and cut from tail to neck down the backbone, breaking the bone. Spread the bird open on your work surface, breast side up. Combine all marinade ingredients into a paste, and rub onto the bird. Refrigerate for six to eight hours.
Heat grill to medium heat, about 350°. Remove chicken from refrigerator and tuck wings back into the crevice of the legs to keep from burning. Place on grill and weigh down flat, using a brick wrapped in tin foil or any heatproof heavy object. Flip every 15 minutes and baste with any remaining marinade. Cook until juices run clear and a meat thermometer reads 160°, should take about 55 minutes.
